Cheesy Shrimp Dip
This creamy hot appetizer will be a hit at your next event due to its comforting flavour and warmth. Serve this delicious dip with Olive & Rosemary dipitas and your guest will devour it in seconds!
Ingredients
1 lb large raw shrimp, peeled and deveined
3 Tbsp olive oil
1 garlic clove, pressed
2 Tbsp fresh lemon juice
dash of salt and fresh black pepper
3 oz light cream cheese
6 oz light sour cream
1 oz light mayonnaise
8 oz Monterey Jack cheese, shredded
Instructions
- Add shrimp, lemon juice, garlic, salt and pepper in a medium bowl. Coat shrimp evenly and let sit in mixture for 15-20 min.
- Heat olive oil in a large oven-safe skillet or cast iron pan over medium heat. Add shrimp mixture in a single layer and sauté for 2 minutes per side (or until colour changed to light pink).
- Transfer shrimp to cutting board. Let cool and cut into pea-sized pieces
- In the same dish, melt together cream cheese, sour cream and mayonnaise
- Stir ¾ of Monterey Jack. As soon as cheese is melted, add chopped shrimp and stir together until mixture is hot and bubbling.
- Remove pan from heat, sprinkle with the remaining shredded cheese and broil in the oven for 3-4 minutes or until cheese is melted and golden.
