Crunchy Kale Salad
This summery, easy to make salad makes a perfect side dish or, if paired with your protein of choice, a light healthy lunch.
Ingredients
For the Salad:
1⁄4 cup Dipitas Seven Grains & Seeds
8 cups curly kale (washed and dried, ribs and stems removed, leaves thinly sliced)
1⁄4 cup crumbled low feta cheese
1⁄4 cup cut up strawberries
For the Dressing:
6 Tbsp extra virgin olive oil
3 Tbsp apple cider vinegar
3 Tbsp lemon juice
2 Tbsp maple syrup
1 tsp kosher salt
Instructions
- Mix together dressing ingredients in a medium bowl, until an emulsion forms
- Place together salad ingredients in a large salad bowl
- Pour the dressing over salad and serve immediately
Useful Tips
If you are making this ahead, just store the salad and the dressing separately in the fridge in an airtight container. Add the dressing to salad immediately before serving.
