Red Lentil Dip
This flavourful dip is healthy and satisfying. Packed with fibre and protein, it will keep you energized during a busy day. Pair it with delicious Olive & Rosemary dipitas for a healthy snack or appetizer.
Ingredients
1 cup red lentils
2 cups of water, to cook lentils
1 onion
Juice of ½ lemon
2 Tbsp cumin
½ tsp cayenne
2 Tbsp tomato paste
2 Tbsp Sriracha
Salt and fresh cracked pepper to taste
Instructions
- Place lentils and water in saucepan and bring to boil. Reduce heat to low, cover and simmer for 10 min until lentils are soft and liquid is absorbed. You may need to add more water while lentils are cooking, if liquid is absorbed before lentils are fully cooked.
- Scrape hot lentils into a medium mixing bowl and add lemon juice, cumin and cayenne
- Sauté onions in a small non-stick pan over medium heat until soft and golden colour. Add tomato paste and sriracha and let simmer for a minute to absorb the flavours.
- Scrape cooked onions into lentil mixture and stir to combine.
- Add salt and cracked pepper to taste
- Serve cooled
Useful Tips
Add ¼ cup chopped sun-dried tomatoes to compliment the flavour and add more colour to the dip
