This easy to make protein rich salad, paired with Seven Grains & Seeds dipitas, makes an excellent snack that will keep you energized during a busy day!

Ingredients

1 medium avocado, pitted, pilled and diced

6 hard-boiled eggs, diced

2 Tbsp finely chopped fresh chives

2 Tbsp finely chopped fresh dill

3 Tbsp light mayonnaise*

1 Tbsp Dijon mustard

Salt and freshly ground black pepper

Instructions

  1. Add and stir all ingredients in a mixing bowl
  2. Add salt and freshly ground black pepper to taste

Useful Tips

Use olive oil or avocado oil based mayonnaise as a healthier alternative
